Make tasty panipuri at home
Who is not eager about tasting panipuri? Especially kids would want
more of it, once they get the hang of it. Elders cannot deny them.
However, the unhygienic street corner panipuri cart, will make them
say no to it. There is another way for everyone, the aged and children
alike, to taste panipuri the hygienic way. You can make it at home. It
is clean and tasty. Note the method:
Ingredients for making puri
One cup of sooji (Bombay rawa) or wheat rawa; flour and three tblsps maida, 1/4 th tsp. baking soda, ½ tsp. salt, oil for deep frying.
For the pani
Half a cup of tamarind extract, 2 cups of water, two tblps jeera powder, half a cup of kothmir (optional); 3 green chillies; one cup pudina leaves (optional); one tblsp black salt.
For the stuffing
Two potatoes, two chopped green chillies, one or two chopped onions, one tsp. fried jeera powder, a little salt, chopped kothmir.
Preparing the puri
Take a bowl and take the sooji in it, add salt and make a dough with hot water.
Leave it
Leave it for 30 minutes. Then make small balls of the dough, roll it out in to puris and deep fry them in hot oil until golden brown in colour.
Making the pani
Make a paste of the kothmir, pudina and green chillies in a mixie. Add some
water to this. Then add the other ingredients meant for pani. The items can be
added as per your taste.
Making the stuffing
Boil the potatoes and keep them aside. Heat some oil and fry the chopped onions and green chillies. Add the boiled potatoes, along with fried jeera powder, salt and kothmir and mix everything thoroughly. The stuffing is ready
to be used.
